Seafood is light, flavorful, and versatile and can be prepared in many different ways. From dips and spreads to skewers and bites, there is a seafood appetizer for every taste and occasion. 1. Firecracker Shrimp

Firecracker shrimp is a delicious dish known for its crispy exterior and spicy flavor. Here’s a simple recipe to make firecracker shrimp at home:

Ingredients:

  • 1 pound super colossal shrimp peeled and deveined (tails intact)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup Panko breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
  • Salt and pepper to taste
  • Oil for frying (vegetable or peanut oil works well)

For the sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon soy sauce
  • 1 teaspoon lime juice

Preparations:

  1. Combine shrimp with buttermilk, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper in a bowl. Let marinate in the refrigerator for at least 30 minutes.
  2. In separate bowls, prepare three stations for coating the shrimp: one with flour, another with beaten eggs, and the third with Panko breadcrumbs.
  3. Heat oil in a deep skillet or frying pan to 350°F (175°C).
  4. Take each marinated shrimp, dredge it in the flour, dip it in the beaten eggs, and then coat it thoroughly with the Panko breadcrumbs. Press the breadcrumbs gently onto the shrimp to ensure they adhere well.
  5. Carefully place the coated shrimp into the hot oil, frying in batches for 2-3 minutes per side or until they turn golden brown and crispy. Avoid overcrowding the pan, which can lower the oil temperature and make the shrimp soggy.
  6. Remove the fried shrimp using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  7. Mix mayonnaise, sweet chili sauce, Sriracha sauce, honey, soy sauce, and lime juice in a bowl until well combined.
  8. Serve the crispy firecracker shrimp with the prepared sauce for dipping. Garnish with chopped green onions or cilantro if desired.

     2. Crab Crescent Triangles

Here’s a simple recipe for Crab Crescent Triangles:

Ingredients:

  • 1 can (6 ounces) crab meat jumbo lump, drained and flaked
  • 1 package (8 ounces) cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 green onions, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tubes (8 ounces each) refrigerated crescent roll dough
  • Sesame seeds or poppy seeds (optional)

Preparations:

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper or lightly grease it.
  2. Combine the drained crabmeat, softened cream cheese, mayonnaise, chopped green onions, garlic powder, onion powder, paprika, salt, and pepper in a mixing bowl. Mix well until all ingredients are evenly combined.
  3. Unroll the crescent roll dough and separate it into triangles along the perforated lines.
  4. Place a spoonful of the crab mixture onto the wide end of each crescent triangle.
  5. Roll up the triangles starting from the wider end and tuck the ends to enclose the filling, forming a crescent shape. Place them seam-side down on the prepared baking sheet.
  6. If desired, you can brush the tops of the crescents with an egg wash and sprinkle sesame or poppy seeds on top for extra flavor and decoration.
  7. Bake in the oven for 11-13 minutes or until the golden brown crescents are cooked through.
  8. Once done, remove from the oven and allow them to cool for a few minutes before serving.

     3. Marinated Bacon Wrapped Scallops

Here’s a simple and delicious recipe for Marinated Bacon-Wrapped Scallops:

Ingredients:

  • 12 large Diver sea scallops
  • 12 slices of bacon (preferably thin-cut)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • Toothpicks

Preparations:

  1. Begin by preparing the marinade. Mix the soy sauce, honey, minced garlic, lemon juice, and black pepper in a bowl.
  2. Pat dry the scallops using paper towels to remove excess moisture.
  3. To marinate the scallops, place them in a shallow dish or a resealable plastic bag. Make sure they are evenly coated with marinade. Cover the dish or seal the bag and refrigerate for at least 30 minutes to 1 hour. For better flavor, you can also marinate them overnight.
  4. Preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top of it.

  • 1/4 cup dry white wine
  • 1 tablespoon cornstarch

  • Cubed bread, cooked potatoes, or blanched vegetables for dipping
